Judy's Thumb Print Cookies

It was passed on through my family.Easy to make and very yummy.


125g butter

1 cup caster sugar

1 tsp vanilla essence

1 egg

2 cups plain flour

1 tsp baking powder

jam -any kind, lemon honey is yummy too. I have used green tomato and ginger jam (green)and kumi kumi and ginger jam(pink)


1.Preheat oven to 180 deg C and grease 2 oven trays.(you may need 3)

2.Cream butter and sugar till fluffy and light.

3.Add vanilla and egg and beat well.

4.Fold in sifted flour and baking powder.

5.Roll into balls the size of a large marble and place on baking trays.

6.Press down on each cookie dough ball with your thumb and fill indent with jam.

7.Place tray in center of the oven and bake 12 to 14 minutes.

8. Cool on wire rack and sprinkle with icing sugar. Yum!
