Hope's Gran’s Figgy Pudding

Don’t know where Gran got the recipe from, but we love it, it’s easy & tasty!
Always nice the next day too.
We always put a sprig of holly on the top, ’cos Gran did!!
It doesn’t have any figs in it, but we’ve always called it that because of the Christmas Carol.

70 grms butter, 2 eggs, 2/3 cup brown sugar, grated rind of 1 lemon & 1 orange, 2 cups mixed fruit, 1 grated apple, 1 1/2 cups flour, 1tsp cinnamon, 1/2 tsp cloves, 1tsp bkg soda, juice of 2 oranges topped up with brandy to equal 2/3 cup of fluid.


MAKE PUDDING ABOUT A MONTH BEFORE: Melt butter, add eggs 1 at a time & brown sugar, mix well. Add grated rind, grated apple & mixed fruit, mix again. Sift flour, soda, spices & mix in along with the juice liquid. Pour into steamed pudding bowl lined with buttered baking paper, cover with foil then lid of bowl. Place an old bread & butter plate in saucepan, have enough boiling water in it to go half way up sides of bowl & steam for 4 hours. Check water hourly & top up when necessary. On Christmas Day boil for a further 3 hours

Serve with lashings of whipped cream!!
