I fiddled with a recipe I found a while ago and came up with this easy to make cookie. It’s easy and the kids love them :)

3/4 c peanut butter

1/2 c caster sugar

1/2 c brown sugar

1/2 c soft butter

1 egg

1/2 tsp vanilla essence

1 1/2 c flour

1/4 tsp salt

3/4 tsp baking soda

1/2 c chocolate chips or chunks

1.Beat the first 6 ingredients together til creamy.

2.Add the rest of the ingredients and mix well.

3.Put cookie dough in fridge for an hour.

4.Roll dough into balls of about 1 tablespoon.Place onto baking paper lined trays about 4cm apart.Press down on each one with a fork.( You can dip fork in caster sugar if you like.)

4.Bake at 160degC for 10 to 12 minutes or till golden. Makes about 45 cookies.
